Fat is the cooking medium in saute`ing,panfrying,and deep-fatfrying.To saute` means to cook quickly in a small amount of hot fat.It is a partial cooking process.Panfrying is cooking to doneness,also in a small amount of fat,but at a more moderate temperature,Cooking a food immersed in fat at a controlled temperature is deep-fatfrying.In all these methods of cooking,heat is transferred by conduction from the energy source through the pan to the fat.Convection currents are set up in the heated fat to aid in distributing the heat.The heated fat then conducts heat to the food it touches.
