摘要:我国烹饪艺术源远流长,菜名数不胜数,而且颇具地方特色,蕴含了悠久的地方文化和传统乃至历史典故.但长期以来我们对菜名的翻译研究却大为滞后,已经影响到中外饮食文化的顺利交流.中国饮食文化博大精深,各种菜品难以全数囊括;仅从加工原料、烹饪方法、口味等来翻译,在翻译过程中完全做到保持中餐菜名的文化性也是非常困难的.本文主要从中式菜肴的名命方式入手,再按国外的理解和语序,并尽可能结合简略的有关菜肴的民俗风或历史传说等来研究中式菜肴的英译问题,这样既保持了菜名所蕴含的文化特色,又方便理解.

abstract: Chinese diet art has a long history, and dishes have mant kinds of names which contain long time local culture, tradition and history allusion. But for a long time the translation studies of dishes is very backward. It already has influenced the diet culture communication between China and English. Chinese diet culture is broad and profound, and we can not generalize all the different kinds of dishes. It is difficult to translate them from material, cooking method and taste that maintains the culture of chinese names of dishes completely.This paper will start with the name method of chinese dish, and the next part will be the understanding and word order of western countries, and combining the folk-custom and history story to research translation of chinese dish. Thus we can preserve culture characteristic of dish name, and help us to understand.
